The rheology of complex fluids (foams, emulsions, suspensions, etc.) is a everyday life science. Through its lens, we can analyze pastry-making or landscape dynamics. As part of my HDR defence, I will present the research I have conducted in this field over the past 15 years. My general approach has been to identify the microscopic mechanisms that control rheology at the macroscopic level, with a particular focus on collective mechanisms. Among other, I will show how Reynolds still has a say in the behavior of Stokesian suspensions, or how the loss of hydrodynamic reversibility in a suspension is analogous to the initiation of flow in a yield stress fluid.
